Not a recipe

So, yesterday I actually managed to eat pretty healthily. I had yoghurt + granola for lunch, because apparently healthy people eat like hippies. Then I decided to cook the chicken breasts that were living in my freezer. They’d been in there for so long I think they had started building igloos and having snow ball fights.

I didn’t have a recipe for just baked chicken, so I improvised. It came out tasting pretty delicious (albeit overly simple for the refined palate). I didn’t have anything to eat it with, but I think brown rice or something would be yummy.

I put a layer of tin foil down in a pan. I thought it would make cleaning up easier, but didn’t account for the juices that would end up leaking underneath it. I sprinkled olive oil on the foil, and then dusted it with cracked black pepper and a cajun seasoning. (Sorry I didn’t feel like whipping out the DSLR for such a boring dinner).

Then I put the chicken breasts on top of the oil. I could fit four into this pan. I spread some more olive oil onto the chicken with a brush, added another layer of pepper and seasoning, and then used more tin foil to create a sealed cooking environment. STEAMY.
Popped it in the oven for about 40 minutes –

And then forgot to take a picture of the finished product. It tasted good though, I swear.

We’re not going to talk about the sugar cookies I baked and then demolished…so I’m just going to consider today a “break even” sort of thing as far as the diet is concerned.
