Cake from Scratch

Among the many things that annoy me, (like not having enough toilet paper, an itch in my ear that I can’t reach, and hang nails), not having chocolate when I crave it is one of the more distressing.

The other night after eating dinner with the Feef’s sister and family, I had a chocolate craving to rival all chocolate cravings. I suggested we go get ice cream, but apparently nobody else in Aiken wants sweets after 11 pm and all the ice cream places were closed. Mike popped some popcorn, out of protest I imagine. But I couldn’t settle for salty.

So, I raided the pantry and picked out all the usual suspects used in a chocolate cake recipe. We didn’t have milk – that would later prove to be a bad thing. But we did have everything else: eggs, butter, sugar, flour, and cocoa.

I was going to just make cupcakes originally, but the first batch came out looking like this –>

Here’s what I used for the cake:
2 3/4 cups flour
1 1/4 cup cocoa powder
1 t. baking soda
1/2 t salt
3 sticks of butter
1/2 cup peanut butter (since I didn’t have milk)
1/4 cup maple syrup (milk substitute?)
Little bit of water
2 1/2 cups sugar
4 eggs
2 T vanilla
I mixed together the eggs and sugar first. It splattered everywhere because apparently when they say medium sized mixing bowl they actually mean bath tub. Then in a seperate bowl I mixed together the dry ingredients.

This is what it looked like with everything mixed together. It was super fluffy – only slightly thicker than whipped cream consistency.

For the icing I used:
4 cups confectioners sugar
1/2 cup water
2 T vanilla
1 cup cocoa

I poured the cake into 2 round pans and baked it at 350 degrees for like a DECADE and the middle just refused to cook. So I ended up with two concave cake halves. By then it was almost 2 in the morning because apparently 20 min prep time and 40 min cook time doesn’t apply to me. NO WAY was I waiting for the dang things to cool all the way. Yep. I frosted them while they were still warm and then shoved the finished product in the fridge and went to bed.
This morning, I had a cake that looked like this:
Now, it’s not winning any Martha Stewart presentation awards, but I think it tastes pretty delicioso. 
Not much to brag about, but at least Mike ate some.

  1. haha oh man. i actually had a bad chocolate craving last night as well. i eventually found a “fun sized” bag of peanut m&ms in my purse that i'd put there a few weeks ago and forgot about. i don't know why they call the tiny bags “fun sized.” there is nothing fun about a small bag of candy!and your cake looks a lot better than any cake i would make! i'd eat it.

  2. sometimes it's the imperfect desserts that taste the best.  almost like they know they're unattractive so they have to up their game in the taste department!  this makes me wish someone invented lick-able computer screens. 🙂
